Meat / Fish Dishes
- Southwestern Fish
- Ingredients: 2 white fish fillets ( 1/2 lb each ), 1 cup shredded cheddar cheese, 1/2 cup picante sauce or salsa cooking spray
- Instructions: 1. PLace fillets in a baking pan that has been sprayed with cooking spray. 2. Cover each filet with 1/2 of the sauce, and top with cheese. 3. Bake uncovered for 20 mins in a 350 degree oven or microwave (optional) for 3-4 mins on high until the cheese melts and the fish flakes easily.
- Parmesan Baked Salmon
- Ingredients: 1/4 cup KRAFT real Mayo Mayonnaise, 1/8 tsp. ground red pepper (cayenne), 2 tsp. Lemon Juice, 2 tsp. KRAFT Grated Parmesan Cheese, 4 salmon fillets (1lb, and skins removed), 10 RITZ Crackers crushed ( 1/2 cup )

Meat-Free Dishes
- Butternut Squash Casserole
- Ingredients: 1 butternut squash, 1 cup white sugar, (1) 1/2 cups of milk, 1 tsp. vanilla extract, 1 pinch salt, 2 tbsp all purpose flour, 3 eggs, 1/4 cup margarine (melted), 1/2 (16 ounce) package vanilla wafers (crushed), 1 cup of brown sugar
- Instructions: 1. Preheat oven to 425 degrees 2. Put butternut squash in microwave and cook on high until soft (2-3 mins). Cut in half, scoop out seeds and cube. Bring a large pot of water to boil. Add squash and cook until tender, about 15 mins. Drain and mash. 3. In a 9×13 in casserole dish combine 3 cups of mashed butternut squash, white sugar, milk, vanilla extract, salt, flour, eggs, and 1/4 cup melted margarine.
- Cheese Quesadillas
- Ingredients: One 4-6 or 8 inch flour tortilla, butter, 2-4 slices of cheese
- Instructions: 1. Put butter on one side of the flour tortilla, place it in skillet. Fold the cheese in half and place it on one half of the tortilla. 2. Add salt and pepper if you wish. 3. Fold the tortilla in half. Once it is golden brown, it is done! 4. Cut into 4 triangles, and serve!
